A friend of mine Carrie Niethammer from Arizona wrote The Prickly Pear Cookbook Delicious recipes for prickly pear pads and fruits http://cniethammer.com/work3.htm and also several other excellent books such as West of Paradise: Exploring Southeastern Arizona Old West meets New West in this guide to a legendary land.
