Corn Beef

With St. Patrick's Day upon us again I thought I'd do a little research on a traditional St. Patty's Day delight...the long time favorite - Corned Beef. 

According to the information found in the "Wikpedia" (online encylopedia) the "Corned" in Corned Beef refers to the salt used to preserve the beef brisket for pickling.

From the online encyclopedia "Wikpedia" comes this interesting information:

In the United States, corned beef is also associated with Saint Patrick's Day, when many Irish Americans eat a traditional meal of corned beef and cabbage. According to the History Channel [1], while cabbage has long been a traditional food item for the Irish, corned beef serving as a substitute for Irish bacon first became traditional in the late 1800s. Irish immigrants living in New York City's Lower East Side sought an equivalent in taste and texture to their traditional Irish bacon (similar to Canadian bacon), and learned about this cheaper alternative to bacon from their Jewish neighbors.

In the United Kingdom corned beef is commonly found in the canned form, and has next to nothing to do with the cured and boiled version.

In Denmark, corned beef is alternatively known as either saltkød or sprængt oksebryst. Traditional uses of the two are distinctive:

  • Saltkød (lit. "cured meat") is used as a cold cut (pålæg)
  • Sprængt oksebryst (lit. "lightly salted beef brisket"), on the other hand, is often served warm, as well as cold.

The most common way to cook corned beef in the Philippines is to sauté it with onions and diced potatoes. It can also be cooked as a soup, with chopped cabbage, or used as an ingredient in torta (omelet) or in Filipino spaghetti.

I just realized today that it has been a year ago this month that I started this blog (January 5, 2006 to be exact).  I hope you have enjoyed it and found it helpful.  If you have specific subjects you would like me to address please don't hesitate to let me know, either by calling (702-360-8165) or e-mailing me.  I had originally intended to post something to the blog daily.... but life sure gets in the way sometimes.  I think I've managed to have a minimum of 2 posts a month.  Sometimes, when work is slow, I manage to get in daily posts (like in December during the holidays).  It's been a work in progress and I enjoy doing it.  I would appreciate having YOUR comments if a posting specifically appeals to you.  There is a comment area at the bottom of each posting.

Daughter's wedding plans are coming along...date has been set...October 18 (yes, it's a weekday, but they want a small wedding and want to keep costs down, this works out perfect for both).  Mom hasn't made it back to Weight Watchers yet to start losing that most dreaded 20 lbs, but it's on my schedule.

Christmas Memories

One of my very favorite Christmas memories is Christmas Eve at your house in Pomona, CA  There were about 20 of us, mostly family, maybe some friends and others without a place to spend the evening.  Long tables were set up in the family room (which was an attached garage that my dad and grandfather had converted to family room) right off the kitchen.  The decorations, the music, the family all together were none but the best times.  The food was scrumptuous.  Although when I was younger I may not have thought that!  One of my favorite dishes that my mom made only once a year was an "Oyster Casserole"....it was her Christmas Eve tradition to make it.  Unfortunately the recipe she used went to the grave with her back in 1987.  

Thanks to the internet and a real estate related 'list-serv' I participate in I have found a recipe similar to the one my mom made,  and I will be making it this Christmas Eve.  (I remember 'scrunching' the saltines for the casserole, that memory came back as I read this recipe).

Here is what I do, it may be what you remember, or not.  It's one of my favorite dishes at holidays, simple (5 ingredients), but expensive (oysters $10/pint=$40!!!) Just seeing that number makes me realize that this is REALLY good, if I don't bat an eye at $40 ingredients for a casserole!!
 
4 pints oysters
3 sleeves saltines
cayenne pepper
stick of butter
half & half
 
Butter a casserole dish.  Crumble 1 sleeve of saltines, more if you need it to cover dish well.  Cover saltines with oysters.  Dot with butter, dash of salt and fairly liberally with cayenne pepper.  Repeat twice, using all materials, ending with buttered, peppered saltine layer on top, not oysters.  Soak with half & half, don't allow the level of the liquid to rise above the level of the crackers but close.  Bake at 350 for 30 minutes.

One of my special friends is my Pastor's wife....Her name is Amy Snowden and she and her husband Pastor Luke are the parents of two beautiful children...Emma age 3 and Adam age 1.  Amy is an awesome cook and many of her recipes  were handed down from her mom (mom died when Amy was 15).  Amy has entered a recipe contest on-line at www.chefs.com.  She was choosen as one the the top 100 overall winners....during the next couple of months (until January 27, 2007, the 100 will be whittled down to 5!  Those 5 top winners will be flown to San Francisco, CA (all expenses paid) and then entered into another contest to pick the best of the best.  One of those top 5 winners will win $10,000 for her recipe.  Now tell me what Pastor and his wife could not use an extra $10,0000???? We at Sovereign Grace Community Church in Las Vegas are all rooting for her and praying she makes it at least to SF.
