Corn Beef

With St. Patrick's Day upon us again I thought I'd do a little research on a traditional St. Patty's Day delight...the long time favorite - Corned Beef.
According to the information found in the "Wikpedia" (online encylopedia) the "Corned" in Corned Beef refers to the salt used to preserve the beef brisket for pickling.
From the online encyclopedia "Wikpedia" comes this interesting information:
In the United States, corned beef is also associated with Saint Patrick's Day, when many Irish Americans eat a traditional meal of corned beef and cabbage. According to the History Channel [1], while cabbage has long been a traditional food item for the Irish, corned beef serving as a substitute for Irish bacon first became traditional in the late 1800s. Irish immigrants living in New York City's Lower East Side sought an equivalent in taste and texture to their traditional Irish bacon (similar to Canadian bacon), and learned about this cheaper alternative to bacon from their Jewish neighbors.
In the United Kingdom corned beef is commonly found in the canned form, and has next to nothing to do with the cured and boiled version.
In Denmark, corned beef is alternatively known as either saltkød or sprængt oksebryst. Traditional uses of the two are distinctive:
- Saltkød (lit. "cured meat") is used as a cold cut (pålæg)
- Sprængt oksebryst (lit. "lightly salted beef brisket"), on the other hand, is often served warm, as well as cold.
The most common way to cook corned beef in the Philippines is to sauté it with onions and diced potatoes. It can also be cooked as a soup, with chopped cabbage, or used as an ingredient in torta (omelet) or in Filipino spaghetti.

One of my special friends is my Pastor's wife....Her name is Amy Snowden and she and her husband Pastor Luke are the parents of two beautiful children...Emma age 3 and Adam age 1. Amy is an awesome cook and many of her recipes were handed down from her mom (mom died when Amy was 15). Amy has entered a recipe contest on-line at www.chefs.com. She was choosen as one the the top 100 overall winners....during the next couple of months (until January 27, 2007, the 100 will be whittled down to 5! Those 5 top winners will be flown to San Francisco, CA (all expenses paid) and then entered into another contest to pick the best of the best. One of those top 5 winners will win $10,000 for her recipe. Now tell me what Pastor and his wife could not use an extra $10,0000???? We at Sovereign Grace Community Church in Las Vegas are all rooting for her and praying she makes it at least to SF.
Amy needs all our help in order to win this contest. Her recipe she submitted to the contest is for her "Old Fashioned Raised Donuts." Busy Day in Las Vegas

Tired after a long day of work I always dread thinking about "what's for dinner?". A REALLY easy main dish is right at the top of my list:
2 chicken breasts (or however many you need for your family)
4 oz Mozzarella cheese (more or less, as desired)
1/2 jar of Ragu or Prego or whatever (I get the kind with mushrooms)
4 oz Parmeasan cheese
Layer the first 3 items....cook at 350 about 45 minutes (be sure and put your feet up during this time, that's VERY important!)....add the Parmeasan cheese and stick it back in the oven for about 5 minutes.
Oh so yummy and oh so quick. Serve with whatever you like, salad, veggies, something easy! I've made this in larger quanities for potluck or company and get tons of compliments.
Not real estate related...but you do have to eat after a long day of looking at property!
